1. Long Beach Island end to end (18 miles one way)

Two things to check before every ride. First, boardwalk hours and electric-bike rules: Seaside Heights, Point Pleasant Beach, and the other boardwalk towns each set their own cycling windows and each regulates electric bikes separately from pedal bikes, with different class and speed limits. They do not all say the same thing and the rules change season to season.
Second, protected land: Island Beach State Park sets its own bicycle policy at the gate, and the Forsythe refuge at Holgate is federal land with seasonal closures for nesting birds. Neither carries over from the town roads. Five minutes of checking, every time.
When to ride Ocean County
April through November. September and October are the best weeks by a wide margin -- the shore crowds vanish after Labor Day, boardwalk restrictions ease outside the summer season, and Island Beach and the Holgate refuge are at their best.
